First Volleyball Game!

We won both games today! We had a great turn out. Thanks to all the girls who came!
It was a blast.
Our next volleyball practice is going to be Wednesday September 30th, at 6 pm at the Canyon Heights building just off Canyon Road.
The next game will be Saturday October 10th, at 4 pm at the stake center.

Chicken Enchilada Casserole

1 lb chicken, cut into small pieces, or 1 can chicken 12 oz
1 small onion, chopped
2 TBS olive oil
2 ( 10 3/4 oz) cans cream of chicken soup
1 cup sour cream
1 (4 0z) can diced green chilies
2 cup grated Colby jack or Cheddar cheese
1 (15 oz) package flour tortillas

Saute onion with olive oil in large frying pan over medium heat. Add chicken pieces and cook thoroughly. Stir in soup, sour cream and chilies. Stack tortillas and cut, with a sharp knife, into thin strips. In a greased 9" x 13" glass baking pan, layer half of shredded tortillas, half of chicken mixture, and half of chese; repeat. Bake for 30 minutes at 350 degrees.

Dancing On Life's Chips

I know you girlies wanted me to give you the story that I shared at Girls Camp, so here it is!


Not too long ago I had "one of those days." I was feeling pressure from a writing deadline. I had company arriving in a couple days and the toilet was clogged.

I went to the bank, and the trainee teller processing my deposit had to start over three times. I swung by the supermarket to pick up a few things and the lines were serpentine. By the time I got home, I was frazzled and sweaty and in a hurry to get something on the table for dinner.

Deciding on Campbell's Cream of Mushroom Soup, I grabbed a can opener, cranked open the can, then remembered I had forgotten to buy milk at the store. Nix the soup idea. Setting the can aside, I went to plan B, which was leftover baked beans. I grabbed a Tupperware from the fridge, popped the seal, took a look and groaned. My husband isn't a picky eater, but even he won't eat baked beans that look like caterpillars. Really frustrated, now, I decided on a menu that promised to be as foolproof as it is nutrition-free: hot dogs and potato chips.

Retrieving a brand new bag of chips from the cupboard, I grabbed the cellophane and gave a hearty pull. The bag didn't open. I tried again. Nothing happened. I took a breath, doubled my muscle, and gave the bag a hearty wrestle. With a loud pop, the cellophane suddenly gave way, ripping wide from top to bottom. Chips flew sky high. I was left holding the bag, and it was empty. It was the final straw. I let out a blood curdling scream. "I can't take it anymore!!!"

My husband heard my unorthodox cry for help. Within minutes he was standing at the doorway to the kitchen, where he surveyed the damage: an opened can of soup, melting groceries, moldy baked beans, and one quivering wife standing ankle deep in potato chips. My husband did the most helpful thing he could think of at the moment. He took a flying leap, landing flat-footed in the pile of chips. And then he began to stomp and dance and twirl, grinding those chips into my linoleum in the process! I stared. I fumed. Pretty soon I was working to stifle a smile. Eventually I had to laugh.

And finally I decided to join him. I, too, took a leap onto the chips. And then I danced. Now I'll be the first to admit that my husband's response wasn't the one I was looking for. But the truth is, it was exactly what I needed. I didn't need a cleanup crew as much as I needed an attitude adjustment, and the laughter from that rather funky moment provided just that.



(this is where I ended the story to fit my roll as the Angel of Happiness, but she goes on)



Now I have a question for you, and it's simply this: Has God ever stomped on your chips? I know that, in my life, there have been plenty of times when I've gotten myself into frustrating situations and I've cried out for help, all the while hoping God would show up with a celestial broom and clean up the mess I've made of things.

What often happens instead is that God dances on my chips, answering my prayer in a completely different manner than I had expected, but in the manner that is best for me after all. Sometimes I can see right away that God's response was the best one after all. Sometimes I have to wait weeks or months before I begin to understand how and why God answered a particular prayer the way He did. There are even some situations that, years later, I'm still trying to understand. I figure God will fill me in sooner or later, either this side of Heaven or beyond.

Do I trust Him? Even when he's answering my prayers in a way that is completely different from my expectations? Even when he's dancing and stomping instead of sweeping and mopping? Can I embrace what He's offering? Can I let His joy adjust my attitude? Am I going to stand on the sidelines and sulk, or am I willing to learn the steps of the dance He's dancing' with my needs in mind?

I'll be honest with you: Sometimes I sulk. Sometimes I dance. I'm working on doing more of the latter than the former. I guess the older I get the more I realize that He really does know what He's doing. He loves me and I can trust Him. Even when the chips are down.

We are having combined mutual with the YM/YW up at Mutual Dell.
Please meet at the church at 7:00 and bring a sweatshirt because is will be chilly up in the canyon!

7 Layered Dip

Begin at bottom
1. 1 to 2 cans refried beans
2. 2-4 mashed avocados with 2-3 TBS of lemon juice
3. 1/2 cup mayonnaise, 80z. sour cream, 1 pkg. taco seasoning, mix
4. 1/2 cup chopped green onions
5. 2 diced tomatoes
6. Grated cheese
7. Diced or sliced olives

Banana Bread

1 cup sugar
1/4 cup butter or margarine
1 egg
1 tsp salt
3 Overripe bananas
1 tsp baking soda
1 1/2 cup flour
1/2 cup sour cream

Mix butter and sugar together until light yellow. Mix in egg. Add in smashed up bananas. Add in dry ingredients until batter is relatively uniform. Mix in sour cream. Pour into greased loaf pan or into greased muffin tin.

Bake at 325 degrees for 55-60 minutes for loaf and 15 minutes for muffin tins, or until a toothpick stuck in the center comes out clean.

Healthier Version:
Substitute 1/4 cup applesauce for the margarine. Reduce sugar to 3/4 cups.

Snickerdoodle Cupcake Recipe

I wasn't able to print off enough copies of the recipe so here it is!
I will try and copy everyone else's and put them on here too if you didn't get a change to get any of the others.

Snickerdoodle Cupcakes


1 ½ cups all-purpose flour
*1 ½ cups cake flour (not self rising), sifted
1 TBS baking powder
½ teaspoon salt
1 TBS ground cinnamon, plus ½ tsp for dusting
1 cup (2 sticks) unsalted butter, room temperature
1 ¾ cups sugar, plus 2 TBS for dusting
4 large eggs, room temperature
2 tsp pure vanilla extract
1 ¼ cups milk


*If you don’t have cake flour just use 1 ½ cups of all purpose flour minus 2 TBS. (3 cups flour total, minus 2 TBS)


1. Preheat oven to 350 F. Line standard muffin tins with paper liners. Sift together both flours, baking powder, salt, and 1 TBS cinnamon.
2. With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. Reduce speed to low. Add flour mixture in three batches, alternating with two additions of milk, and beating until combined after each.
3. Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored up to 2 days at room temperature, or frozen up to 2 months, in airtight containers.
4. To finish, combine remaining ½ teaspoon cinnamon and 2 tablespoons sugar. Using a pastry bag fitted with a large plain tip (Ateco #809 or Wilton #1A), pipe frosting on each cupcake: Hold bag over cupcake with tip just above top, and squeeze to create a dome of frosting, then release pressure and pull up to form a peak. Using a small, fine sieve, dust peaks with cinnamon-sugar. Cupcakes are best eaten the day they are frosted; keep at room temperature until ready to serve!
5. Makes 28 large cupcakes, and lots of mini cupcakes!


For mini cupcakes, bake for 10 minutes, rotating at 5 minutes, until a cake tester inserted at the centers, comes out clean.
